  1. Step 1: Press tofu for 15 minutes, then toss with 1 tsp cornstarch. Heat 2 tbsp neutral oil in a large skillet over medium-high heat. Add tofu cubes and cook for 5-7 minutes until golden and crispy on all sides.
  2. Step 2: Remove tofu and set aside. Add 2 minced garlic cloves and 1 tbsp minced ginger to skillet, sautéing for 30 seconds until fragrant.
  3. Step 3: Stir in 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp honey, and 1 tsp sesame oil. Cook for 1 minute until sauce bubbles.
  4. Step 4: Add 2 cups bok choy quarters and 2 tbsp water. Cover and cook for 3-4 minutes until bok choy is tender-crisp.
  5. Step 5: Return tofu to skillet, toss to coat in sauce, and cook for 1 minute more. Garnish with 2 tbsp sliced green onions.
