15-Minute Tofu Stir-Fry with Bok Choy

Ingredients
- 14 oz (pressed, 1/2-inch cubes) firm tofu
- 2 heads (quartered lengthwise) bok choy
- 2 cloves (minced) garlic
- 1 tbsp (minced) fresh ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp sesame oil
- 1 tsp cornstarch
- 2 tbsp neutral oil
- 2 tbsp (sliced) green onions
Instructions
- Step 1: Press tofu for 15 minutes, then toss with 1 tsp cornstarch. Heat 2 tbsp neutral oil in a large skillet over medium-high heat. Add tofu cubes and cook for 5-7 minutes until golden and crispy on all sides.
- Step 2: Remove tofu and set aside. Add 2 minced garlic cloves and 1 tbsp minced ginger to skillet, sautéing for 30 seconds until fragrant.
- Step 3: Stir in 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp honey, and 1 tsp sesame oil. Cook for 1 minute until sauce bubbles.
- Step 4: Add 2 cups bok choy quarters and 2 tbsp water. Cover and cook for 3-4 minutes until bok choy is tender-crisp.
- Step 5: Return tofu to skillet, toss to coat in sauce, and cook for 1 minute more. Garnish with 2 tbsp sliced green onions.
