Almond and Orange Crème Brûlée

Ingredients
- 2 cups Heavy cream
- 1 tsp Almond extract
- 1 tbsp Orange zest
- 3/4 cup Sugar
- 4 Egg yolks
- 1/4 tsp Salt
Instructions
- Step 1: Preheat oven to 325°F (163°C) and place a rack in the middle.
- Step 2: In a saucepan, heat 2 cups heavy cream, 1 tsp almond extract, and 1 tbsp orange zest over medium heat until bubbles form around the edges (5 minutes), stirring occasionally.
- Step 3: Whisk 4 egg yolks, 3/4 cup sugar, and 1/4 tsp salt in a bowl until pale and thick (2 minutes).
- Step 4: Slowly pour the hot cream mixture into the egg yolk mixture while whisking constantly to prevent curdling.
- Step 5: Strain through a fine-mesh sieve into a bowl.
- Step 6: Divide the mixture into 4 ramekins and place in a baking dish.
- Step 7: Pour hot water into the baking dish until it reaches halfway up the ramekins.
- Step 8: Bake for 30-35 minutes until edges are set but center still jiggles slightly.
