Aperol Ginger Mint Fizz

Ingredients
- 1.5 oz Aperol
- 1/2 oz Fresh ginger juice
- 6 Fresh mint leaves
- 1/2 oz Simple syrup
- 3 oz Club soda
- 1 Lime wedge
Instructions
- Step 1: In a cocktail shaker, add 6 fresh mint leaves and 1/2 oz simple syrup. Muddle gently for 10 seconds until the mint is fragrant and the syrup is absorbed.
- Step 2: Add 1.5 oz Aperol, 1/2 oz fresh ginger juice, and ice to the shaker. Shake vigorously for 20 seconds until the outside of the shaker is frosty and ingredients are well-chilled.
- Step 3: Strain into a chilled highball glass filled with fresh ice cubes. Top with 3 oz club soda and give one gentle stir to combine. Garnish with a lime wedge, pressing it against the glass to release oils before dropping it in.
