Aperol-Glazed Salmon with Lemon and Herbs

  1. Step 1: Preheat oven to 400°F. Place salmon fillets skin-side down on a parchment-lined baking sheet. Season with 1/2 tsp salt and 1/4 tsp black pepper.
  2. Step 2: In a small bowl, whisk together 2 tbsp Aperol, 1 tbsp honey, 1 tbsp fresh lemon juice, and 1 tsp dried thyme. Brush half the mixture over the salmon.
  3. Step 3: Bake for 12-15 minutes until salmon is opaque and flakes easily, brushing with remaining glaze halfway through.
  4. Step 4: Remove from oven and top with 2 tbsp chopped fresh parsley.
