Aperol-Glazed Salmon with Lemon and Herbs

Ingredients
- 4, 6 oz each Salmon fillets
- 2 tbsp Aperol
- 1 tbsp Honey
- 1 tbsp Fresh lemon juice
- 1 tsp Dried thyme
- 1 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp Fresh parsley
Instructions
- Step 1: Preheat oven to 400°F. Place salmon fillets skin-side down on a parchment-lined baking sheet. Season with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: In a small bowl, whisk together 2 tbsp Aperol, 1 tbsp honey, 1 tbsp fresh lemon juice, and 1 tsp dried thyme. Brush half the mixture over the salmon.
- Step 3: Bake for 12-15 minutes until salmon is opaque and flakes easily, brushing with remaining glaze halfway through.
- Step 4: Remove from oven and top with 2 tbsp chopped fresh parsley.
