Apple-Cinnamon Pork Tenderloin with Maple Glaze

- 1.5 lb, trimmed of fat Pork tenderloin
- 2 tbsp All-purpose flour
- 1 tbsp Olive oil
- 3 medium, cored and sliced 1/4-inch thick Apples
- 3 tbsp Maple syrup
- 1 tbsp Dijon mustard
- 1 tsp Ground cinnamon
- 1/2 tsp Garlic powder
- 1/4 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat pork dry with paper towels, then season with 2 tbsp flour, 1/4 tsp salt, and 1/4 tsp pepper. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear pork on all sides for 2 minutes per side until golden brown, then transfer to a plate.
- Step 2: Add apples to the skillet, stirring to coat in oil. Cook for 3 minutes until slightly softened. Whisk maple syrup, Dijon mustard, cinnamon, and garlic powder in a small bowl. Pour mixture over apples and stir to combine.
- Step 3: Return pork to the skillet, nestling it among the apples. Spoon glaze over the top. Transfer skillet to oven and roast for 20-22 minutes until pork reaches 145°F internal temperature and apples are tender.
- Step 4: Let rest 5 minutes before slicing. Spoon apples and glaze over the top of each serving.
