Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear pork on all sides for 2 minutes per side until golden brown, then transfer to a plate.
  2. Step 2: Add apples to the skillet, stirring to coat in oil. Cook for 3 minutes until slightly softened. Whisk maple syrup, Dijon mustard, cinnamon, and garlic powder in a small bowl. Pour mixture over apples and stir to combine.
