Apple-Sage Stuffed Pork Chops

Ingredients
- 4 (8 oz each, bone-in) pork chops
- 1, peeled, cored, and finely diced Granny Smith apple
- 2 tbsp, chopped fresh sage
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp all-purpose flour
- 1/2 cup chicken broth
- 2 tbsp apple cider
Instructions
- Step 1: Preheat oven to 400°F (200°C). Season both sides of pork chops with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: In a bowl, mix 1/2 cup diced apple, 2 tbsp chopped sage, and 1 tbsp butter. Spoon this mixture onto the center of each pork chop, then fold edges over to enclose filling and secure with 2 toothpicks per chop.
- Step 3: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Dredge each stuffed pork chop in 2 tbsp all-purpose flour, shaking off excess, then place in skillet. Sear for 2-3 minutes per side until golden.
- Step 4: Transfer skillet to oven and roast for 15-20 minutes, or until pork reaches 145°F (63°C) internally.
- Step 5: While pork roasts, melt 1 tbsp butter in a small saucepan. Add 1/2 cup chicken broth and 2 tbsp apple cider, stirring to combine. Simmer for 5 minutes until slightly reduced.
- Step 6: Remove pork from oven, let rest 5 minutes, then remove toothpicks. Serve with apple cider sauce drizzled over top.
