Aquatic Center Herb-Crusted Salmon Fillets

  1. Step 1: Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels, then rub with 1 tbsp lemon juice and 1/2 tbsp dill.
  2. Step 2: Mix remaining 2 tbsp dill, lemon zest, 1 tbsp olive oil, and 1 tsp salt in a small bowl. Spread evenly over salmon skin, pressing gently to adhere.
  3. Step 3: Place salmon skin-side down in a lightly oiled baking dish and bake for 12-14 minutes until edges are opaque and fish flakes easily with a fork.
  4. Step 4: Whisk cucumber slices, red onion, 1 tbsp yogurt, 1 tsp lemon juice, and 1/2 tbsp dill in a bowl until combined, then chill for 10 minutes.
  5. Step 5: Serve salmon fillets over cucumber salad with a dollop of extra yogurt on the side and a sprinkle of fresh dill.
