Aquatic Center Herb-Crusted Salmon Fillets
Salmon baked with fresh dill and lemon, served over a light cucumber-dill salad for a refreshing summer meal.

Ingredients
- 2 (6 oz each), skin-on salmon fillets
- 3 tbsp, chopped dill
- 1, zested and juiced lemon
- 2 tbsp olive oil
- 1 medium, thinly sliced cucumber
- 1/4 cup, finely diced red onion
- 1/4 cup plain yogurt
- 1 tbsp, chopped fresh dill
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels, then rub with 1 tbsp lemon juice and 1/2 tbsp dill.
- Step 2: Mix remaining 2 tbsp dill, lemon zest, 1 tbsp olive oil, and 1 tsp salt in a small bowl. Spread evenly over salmon skin, pressing gently to adhere.
- Step 3: Place salmon skin-side down in a lightly oiled baking dish and bake for 12-14 minutes until edges are opaque and fish flakes easily with a fork.
- Step 4: Whisk cucumber slices, red onion, 1 tbsp yogurt, 1 tsp lemon juice, and 1/2 tbsp dill in a bowl until combined, then chill for 10 minutes.
- Step 5: Serve salmon fillets over cucumber salad with a dollop of extra yogurt on the side and a sprinkle of fresh dill.
