Aquatic Center Herb-Infused Cod

Flaky cod fillets baked with lemon and herbs, finished with a bright dill sauce.

  1. Step 1: Preheat oven to 400°F (200°C). Pat cod dry, season with salt and pepper, and place on a parchment-lined baking sheet.
  2. Step 2: Squeeze lemon juice over fish, dot with 1 tbsp olive oil, and top with half the dill.
  3. Step 3: Bake for 12-14 minutes until fish flakes easily with a fork.
  4. Step 4: While fish cooks, melt 1 tsp butter in a small saucepan over medium heat. Add minced shallot and sauté for 2 minutes until translucent.
  5. Step 5: Stir in white wine, simmer for 3 minutes until reduced by half, then add cream and remaining dill. Cook 2 more minutes until sauce thickens slightly.
  6. Step 6: Spoon sauce over baked cod and garnish with extra dill.
