Asparagus and Chive Frittata

  1. Step 1: Whisk 8 large eggs, 1/4 cup milk, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl until smooth.
  2. Step 2: Heat 1 tbsp olive oil in a 10-inch nonstick skillet over medium heat. Add 1 cup asparagus (sliced thin) and cook 3-4 minutes until tender but crisp, then stir in 2 tbsp chopped chives and cook 1 minute until fragrant.
  3. Step 3: Pour egg mixture over vegetables. Cook 3-4 minutes over medium-low heat, gently lifting edges with a spatula to allow uncooked egg to flow underneath, until edges are set but center is slightly runny.
  4. Step 4: Transfer skillet to oven and bake at 375°F for 8-10 minutes until center is set and golden. Rest 5 minutes before slicing.
