Asparagus and Chive Frittata

Ingredients
- 8 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 cup, sliced thin asparagus
- 2 tbsp, chopped chives
Instructions
- Step 1: Whisk 8 large eggs, 1/4 cup milk, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl until smooth.
- Step 2: Heat 1 tbsp olive oil in a 10-inch nonstick skillet over medium heat. Add 1 cup asparagus (sliced thin) and cook 3-4 minutes until tender but crisp, then stir in 2 tbsp chopped chives and cook 1 minute until fragrant.
- Step 3: Pour egg mixture over vegetables. Cook 3-4 minutes over medium-low heat, gently lifting edges with a spatula to allow uncooked egg to flow underneath, until edges are set but center is slightly runny.
- Step 4: Transfer skillet to oven and bake at 375°F for 8-10 minutes until center is set and golden. Rest 5 minutes before slicing.
