- 3 tbsp pumpkin seeds
- 1, juiced lime
- 1 tbsp olive oil
- 1/4 tsp sea salt
- 2 tbsp, chopped fresh cilantro
Instructions
- Step 1: In a medium bowl, combine sliced cucumbers, diced avocado, and pumpkin seeds.
- Step 2: Whisk lime juice, 1 tbsp olive oil, 1/4 tsp sea salt, and 1/4 tsp black pepper until emulsified.
- Step 3: Pour dressing over cucumber mixture and gently toss until evenly coated, being careful not to mash avocado.
