Baked Citrus Pork Griot with Herb Crust

Ingredients
- 1.5 lbs pork shoulder
- 1/4 cup fresh lime juice
- 2 tbsp fresh thyme leaves
- 2, minced garlic cloves
- 1 tsp ground allspice
- 1/2 tsp paprika
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: In a large bowl, combine 1/4 cup fresh lime juice, 2 tbsp fresh thyme leaves, 2 minced garlic cloves, 1 tsp ground allspice, 1/2 tsp paprika, 1/4 cup olive oil, 1/2 tsp salt, and 1/4 tsp black pepper; mix until emulsified. Add 1.5 lbs pork shoulder cubes and toss to coat thoroughly.
- Step 2: Transfer pork to a baking dish, spreading in a single layer. Bake uncovered at 375°F (190°C) for 45 minutes, or until internal temperature reaches 165°F and edges are golden brown.
- Step 3: Let rest 10 minutes before serving to allow juices to redistribute.
