Baked Coconut Custard Cups with Toasted Coconut

Ingredients
- 1 cup Full-fat coconut milk
- 3 Egg yolks
- 1/2 cup Sugar
- 2 tbsp Cornstarch
- 1 tsp Vanilla extract
- 1 tsp Lime zest
- 1/4 cup Unsweetened coconut flakes
Instructions
- Step 1: Preheat oven to 350°F. Whisk together 1 cup full-fat coconut milk, 3 egg yolks, 1/2 cup sugar, 2 tbsp cornstarch, 1 tsp vanilla extract, and 1 tsp lime zest until smooth.
- Step 2: Pour mixture into four 4-ounce ramekins, then place in a baking dish filled with 1 inch of hot water.
- Step 3: Bake for 35-40 minutes until set and edges are lightly golden.
- Step 4: Cool to room temperature, then sprinkle with 1/4 cup toasted coconut flakes before serving.
