Baked Hash Brown and Cheddar Egg Casserole

- 2 cups shredded hash browns
- 2 tablespoons unsalted butter
- 4 large eggs
- 1/2 cup milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 375°F. Grease a 9x13-inch baking dish with 2 tablespoons unsalted butter. Spread 2 cups shredded hash browns evenly in the dish.
- Step 2: In a bowl, whisk 4 large eggs, 1/2 cup milk, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until well combined. Pour the egg mixture over the hash browns, then sprinkle 1/4 cup shredded cheddar cheese, 1/4 cup chopped onion, and 1/4 cup chopped bell pepper evenly on top.
- Step 3: Bake for 35-40 minutes, or until the center is set and the top is golden brown. Sprinkle the remaining 1/4 cup shredded cheddar cheese on top and bake for 5 more minutes until melted.
