Baked Lemon-Dill Salmon with Roasted Cherry Tomatoes

Ingredients
- 6 oz salmon fillets
- 1 cup cherry tomatoes
- 1 tbsp olive oil
- 1/2 lemon
- 1 tbsp fresh dill
- 1 clove garlic
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Toss cherry tomatoes with 1/2 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp pepper on a small baking sheet.
- Step 2: Place salmon fillets on the same sheet, skin-side down. Squeeze half the lemon over the salmon and dot with minced garlic.
- Step 3: Bake for 12-14 minutes until salmon is opaque and flakes easily with a fork.
- Step 4: While salmon bakes, chop dill and squeeze remaining lemon juice over tomatoes. After baking, remove salmon, then drizzle tomatoes with remaining lemon juice and fresh dill. Serve immediately with salmon.
