Baked Lemon-Dill Salmon with Roasted Cherry Tomatoes

  1. Step 1: Preheat oven to 400°F. Toss cherry tomatoes with 1/2 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp pepper on a small baking sheet.
  2. Step 2: Place salmon fillets on the same sheet, skin-side down. Squeeze half the lemon over the salmon and dot with minced garlic.
  3. Step 3: Bake for 12-14 minutes until salmon is opaque and flakes easily with a fork.
  4. Step 4: While salmon bakes, chop dill and squeeze remaining lemon juice over tomatoes. After baking, remove salmon, then drizzle tomatoes with remaining lemon juice and fresh dill. Serve immediately with salmon.
