Baked Peach and Ginger Crisp

Ingredients
- 4 medium, sliced peaches
- 1 tbsp, grated ginger
- 2 tbsp honey
- 1/2 cup oats
- 1/4 cup all-purpose flour
- 3 tbsp, cold and cubed butter
- 1/2 tsp cinnamon
- pinch salt
Instructions
- Step 1: Preheat oven to 375°F. Place 4 medium sliced peaches in a 9x9 inch baking dish.
- Step 2: Mix 1 tbsp grated ginger, 2 tbsp honey, and a pinch of salt in a small bowl. Pour over peaches and toss to coat.
- Step 3: In another bowl, combine 1/2 cup oats, 1/4 cup all-purpose flour, 1/2 tsp cinnamon, and a pinch of salt. Add 3 tbsp cold cubed butter and cut in with a pastry cutter until crumbly.
- Step 4: Sprinkle oat mixture evenly over peaches.
- Step 5: Bake for 30-35 minutes until topping is golden and peaches are bubbling around edges.
