- 1.5 lbs, boneless skinless, cut into 1-inch cubes chicken breast
- 2 cups, packed fresh spinach
- 1/2 cup, softened cream cheese
- 1/2 cup, shredded mozzarella cheese
- 1/4 cup, grated Parmesan cheese
- 2 tbsp olive oil
- 1 clove, minced garlic

Instructions
- Step 1: Preheat oven to 375°F. Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 minced garlic clove and cook for 1 minute until fragrant.
- Step 2: Add 1.5 lbs chicken breast cubes to the skillet and cook for 6-8 minutes, turning occasionally, until golden brown and cooked through. Transfer to a bowl.
- Step 3: In the same skillet, add 2 cups packed fresh spinach and cook for 2-3 minutes until wilted. Stir in 1/2 cup softened cream cheese until melted and smooth.
- Step 4: Add the cooked chicken to the spinach mixture and stir to combine. Transfer to a 9x13-inch baking dish, spreading evenly. Sprinkle 1/2 cup shredded mozzarella and 1/4 cup grated Parmesan over the top.
- Step 5: Bake for 20-25 minutes until cheese is melted and bubbly, with golden edges.
