  2. Step 2: Heat a large Dutch oven over medium-high heat, add pork belly in a single layer, and sear for 4 minutes per side until golden brown.
  3. Step 3: Reduce heat to medium, add 1/2 cup diced onion and 2 minced garlic cloves, and cook for 3 minutes until softened.
  4. Step 4: Pour in 3/4 cup balsamic vinegar and 1/2 cup apple cider, then add 2 tbsp honey and 1 tbsp chopped fresh thyme; bring to a simmer.
