Banana Monkey Bread with Brown Sugar Cinnamon Glaze

- 2 medium ripened bananas
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup packed brown sugar
- 1 tbsp cinnamon
- 1/2 cup melted butter
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Step 1: Preheat oven to 350°F and grease a 9x5-inch loaf pan.
- Step 2: In a large bowl, mash bananas until smooth. Add melted butter, eggs, and vanilla, mixing until well combined.
- Step 3: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to banana mixture, mixing until just combined.
- Step 4: In a small bowl, mix brown sugar and cinnamon. Sprinkle half the mixture over the batter in the loaf pan.
- Step 5: Pour remaining batter over the sugar mixture, then sprinkle the rest of the sugar mixture on top.
- Step 6: Bake for 55-60 minutes until a toothpick inserted comes out clean. Let cool in pan for 15 minutes before slicing.
