Basil and Thyme Stuffed Chicken Breast

Ingredients
- 4 (about 1.5 lbs) Boneless, skinless chicken breasts
- 2 tbsp Fresh basil
- 1 tbsp Fresh thyme
- 2 cloves Garlic
- 1 tsp Lemon zest
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp Olive oil
- 1 tbsp Butter
Instructions
- Step 1: Preheat oven to 375°F. Cut horizontal pockets into each chicken breast. In a small bowl, combine 2 tbsp fresh basil, 1 tbsp fresh thyme, 2 minced garlic cloves, 1 tsp lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper. Stuff mixture into pockets.
- Step 2: Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper on both sides.
- Step 3: Sear chicken for 2-3 minutes per side until golden brown.
- Step 4: Transfer skillet to oven and bake 15-20 minutes until internal temperature reaches 165°F.
- Step 5: Remove from oven, let rest 5 minutes, then slice and serve with pan drippings.
