Beef & Beetroot Stir-Fry with Shiitake Mushrooms

  1. Step 1: Slice 8 oz grass-fed beef against the grain into 1/4-inch strips. Peel and dice 1 medium beetroot into 1/4-inch cubes.
  2. Step 2: Heat 1 tbsp avocado oil in a wok over high heat until shimmering. Add beef and stir-fry for 2 minutes until browned, then remove and set aside.
  3. Step 3: Add 2 minced garlic cloves and 1 tbsp fresh ginger to the wok, sautéing for 30 seconds until fragrant. Add diced beetroot and 4 oz sliced shiitake mushrooms, stir-frying for 5 minutes until beets are tender-crisp.
  4. Step 4: Return beef to wok, add 2 tbsp coconut aminos and 1 tbsp sesame oil, tossing for 1 minute until sauce thickens and coats ingredients.
