Bengali Misti Doi: Sweet Yogurt with Cardamom

Ingredients
- 2 cups (480ml) Full-fat milk
- 1/2 cup (100g) Sugar
- 3, seeds removed and crushed Cardamom pods
- 2 tbsp (plain yogurt with active cultures) Yogurt culture
Instructions
- Step 1: In a saucepan, combine milk and sugar. Heat over medium heat, stirring until sugar dissolves and mixture reaches a gentle simmer (do not boil). Remove from heat and cool to lukewarm (110°F/43°C).
- Step 2: Stir in crushed cardamom seeds and yogurt culture. Pour mixture into a clean glass jar.
- Step 3: Cover jar with a lid or cloth and let sit in a warm place (like an oven with light on) for 8-12 hours until set and slightly thickened.
- Step 4: Refrigerate for at least 4 hours to chill completely. Serve cold as a dessert.
