Ingredients
- 2 cups (strawberries, blueberries, raspberries) mixed berries
- 1/4 cup granulated sugar
- 2 tbsp, chopped fresh mint leaves
- 1 tbsp lemon juice
- 1/2 cup cold water
Instructions
- Step 1: In a small saucepan, combine 2 cups mixed berries, 1/4 cup granulated sugar, and 1/2 cup cold water. Heat over medium-low, stirring until sugar dissolves and berries break down (about 5 minutes).
- Step 2: Remove from heat and let cool to room temperature. Strain through a fine-mesh sieve into a bowl, pressing berries to extract juice. Discard solids.
- Step 3: Stir in 2 tbsp chopped mint leaves and 1 tbsp lemon juice. Chill mixture for 2 hours until cold.
- Step 4: Pour into an ice cream maker and churn for 20-25 minutes until frozen. Transfer to a freezer-safe container and freeze for 2 hours before serving.
