Bitter Orange Marmalade with Aperol

Ingredients
- 4 medium Seville orange
- 2 cups Water
- 1.5 cups Sugar
- 2 tbsp Aperol
- 1 Lemon
Instructions
- Step 1: Peel and section Seville oranges, removing all pith, then cut into 1/4-inch slices and place in a saucepan with 2 cups water.
- Step 2: Simmer uncovered over medium heat for 30 minutes until oranges are very tender.
- Step 3: Add 1.5 cups sugar and 1 tbsp lemon juice, stirring until dissolved, then bring to a rolling boil.
- Step 4: Cook for 20 minutes, stirring occasionally, until mixture thickens and coats the back of a spoon.
- Step 5: Remove from heat, stir in 2 tbsp Aperol and 1 tsp lemon zest, then cool to room temperature before transferring to a sterilized jar.
