Breaded Chicken Tenders with Garlic Herb and Lemon-Dill Sauce

Ingredients
- 1 lb, boneless and skinless, cut into 1-inch strips chicken breasts
- 1/2 cup all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 large, beaten eggs
- 1/2 cup panko breadcrumbs
- 2 tbsp olive oil
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tbsp, chopped fresh dill
Instructions
- Step 1: In a shallow dish, mix 1/2 cup all-purpose flour, 1/2 tsp garlic powder, 1/2 tsp dried oregano, 1/4 tsp salt, and 1/4 tsp black pepper.
- Step 2: In another shallow dish, beat 2 large eggs.
- Step 3: In a third shallow dish, place 1/2 cup panko breadcrumbs.
- Step 4: Dredge each chicken strip in the flour mixture, then in the beaten eggs, then in the panko breadcrumbs, pressing gently to adhere to all sides.
- Step 5: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add breaded chicken strips in a single layer and cook for 4-5 minutes per side, until golden brown and cooked through (internal temperature 165°F).
- Step 6: While chicken cooks, whisk together 1/4 cup mayonnaise, 1 tbsp lemon juice, 1 tbsp chopped fresh dill, and 1 minced garlic clove to make the sauce.
- Step 7: Serve chicken tenders with lemon-dill sauce on the side for dipping.
