- 1/2, thinly sliced cucumber
- 1/4 cup, thinly sliced radishes
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tbsp, chopped fresh parsley
- 1/2 tsp honey
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Whisk 2 tbsp extra virgin olive oil, 1 tbsp lemon juice, 1 tsp Dijon mustard, 1 tbsp fresh parsley, 1/2 tsp honey, 1/4 tsp salt, and 1/8 tsp black pepper in a small bowl until emulsified.
- Step 2: Combine 5 oz mixed baby greens, 1/2 cucumber thinly sliced, and 1/4 cup radishes thinly sliced in a large bowl.
