Californian Avocado and Black Bean Tostada with Lime Crema

Ingredients
- 8 corn tortillas
- 2 avocado
- 1 (15 oz can), drained black beans
- 1/4 cup, finely diced red onion
- 2 tbsp lime juice
- 1/4 cup sour cream
- 2 tbsp, chopped cilantro
- 1/2 tsp cumin
- 1 tbsp olive oil
- 1/4 tsp salt
Instructions
- Step 1: Heat 1 tbsp olive oil in a skillet over medium heat. Add 1/4 cup diced red onion and 1/2 tsp cumin, sautéing for 3 minutes until softened. Stir in drained black beans and 1/4 tsp salt, cooking for 5 minutes to heat through.
- Step 2: Dice 2 avocados into 1/4-inch cubes. In a bowl, mix 2 tbsp lime juice, 1/4 cup sour cream, and 2 tbsp chopped cilantro to make crema.
- Step 3: Warm tortillas in a dry skillet for 30 seconds per side until crisp. Spread 1/4 cup black bean mixture on each, top with avocado cubes, and drizzle with lime crema before serving.
