Californian Citrus-Glazed Salmon with Roasted Fennel

Ingredients
- 4 (6 oz each) salmon fillets
- 1/4 cup orange juice
- 1 tsp lemon zest
- 2 fennel bulbs
- 2 tbsp olive oil
- 2 tbsp fresh dill
- 1 cup wild rice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Place 2 fennel bulbs, sliced into 1/2-inch wedges, in a baking dish with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Toss to coat and roast for 20 minutes until tender and golden.
- Step 2: In a small bowl, whisk 1/4 cup orange juice, 1 tsp lemon zest, and 2 tbsp fresh dill. Brush half the mixture over salmon fillets and place on a parchment-lined baking sheet.
- Step 3: Bake salmon for 12-15 minutes until opaque and easily flakes with a fork, brushing with remaining glaze halfway through. Simmer wild rice in 2 cups water for 40 minutes until tender, then fluff with a fork.
