Californian Sweet Potato and Kale Hash with Fried Egg

Ingredients
- 2 medium, diced sweet potatoes
- 2 cups, chopped kale
- 1/2 cup, diced onion
- 1 tbsp olive oil
- 2 cloves, minced garlic
- 4 eggs
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbsp, chopped chives
Instructions
- Step 1: Toss 2 medium diced sweet potatoes with 1 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp black pepper. Spread on a baking sheet and roast at 425°F (220°C) for 25 minutes until tender and slightly caramelized.
- Step 2: Heat a skillet over medium heat. Add 1/2 cup diced onion and 2 minced garlic cloves, sautéing for 3 minutes until fragrant. Stir in 2 cups chopped kale and cook for 2 minutes until wilted.
- Step 3: Add roasted sweet potatoes to the skillet with kale mixture. Crack 4 eggs over the top and cook for 3-4 minutes until yolks are still runny. Sprinkle with 2 tbsp chopped chives before serving.
