Cardamom-Spiced Rice Pudding with Coconut

  1. Step 1: In a saucepan, combine 1/2 cup jasmine rice, 1 1/2 cups coconut milk, 4 crushed cardamom pods, and 1/4 cup sugar. Bring to a gentle simmer over medium-low heat, stirring occasionally.
  2. Step 2: Cook uncovered for 25 minutes, stirring every 5 minutes, until rice is tender and mixture thickens to a pudding consistency.
  3. Step 3: Remove cardamom pods. Stir in 1/2 cup milk and simmer for 5 more minutes. Cool completely to room temperature.
  4. Step 4: Chill in the refrigerator for at least 2 hours. Serve topped with 2 tbsp toasted coconut flakes.
