Cardamom-Spiced Rice Pudding with Coconut

Ingredients
- 1/2 cup jasmine rice
- 1 1/2 cups coconut milk
- 4, crushed cardamom pods
- 1/4 cup sugar
- 1/2 cup milk
- 2 tbsp, toasted coconut flakes
Instructions
- Step 1: In a saucepan, combine 1/2 cup jasmine rice, 1 1/2 cups coconut milk, 4 crushed cardamom pods, and 1/4 cup sugar. Bring to a gentle simmer over medium-low heat, stirring occasionally.
- Step 2: Cook uncovered for 25 minutes, stirring every 5 minutes, until rice is tender and mixture thickens to a pudding consistency.
- Step 3: Remove cardamom pods. Stir in 1/2 cup milk and simmer for 5 more minutes. Cool completely to room temperature.
- Step 4: Chill in the refrigerator for at least 2 hours. Serve topped with 2 tbsp toasted coconut flakes.
