Cauliflower-Crusted Chicken with Garlic Butter

- 4 (boneless, skinless) chicken thighs
- 1 cup cauliflower
- 1/4 cup Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 garlic cloves
- 1 tablespoon fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a bowl, mix 1 cup riced cauliflower, 1/4 cup grated Parmesan cheese, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Step 3: Pat 4 chicken thighs dry, coat each in the cauliflower mixture, pressing gently to adhere.
- Step 4: Heat 2 tablespoons olive oil in an oven-safe skillet over medium-high heat until shimmering.
- Step 5: Place chicken in skillet and cook for 5 minutes per side until golden brown.
- Step 6: Transfer skillet to oven and bake for 15-18 minutes until chicken reaches 165°F.
- Step 7: While chicken bakes, melt 2 tablespoons butter in a small pan, add 2 minced garlic cloves, and cook for 1 minute until fragrant.
- Step 8: Remove chicken from oven, drizzle with garlic butter, and sprinkle with 1 tablespoon fresh parsley.
