Chai-Spiced Poached Pears with Vanilla Ice Cream

  1. Step 1: Peel and halve 4 medium Bosc pears, removing cores. Place in a medium saucepan.
  2. Step 2: Add 1 cup water, 2 chai tea bags, 3 tbsp honey, 1 cinnamon stick, 1/4 tsp ground cardamom, and 1 strip lemon peel to the saucepan.
  3. Step 3: Bring to a gentle simmer over medium heat, then reduce heat to low. Cover and poach for 15 minutes until pears are tender when pierced with a fork.
  4. Step 4: Carefully remove pears from liquid with a slotted spoon. Simmer the poaching liquid for 5 minutes to reduce slightly, then strain through a fine-mesh sieve.
  5. Step 5: Place each pear half in a bowl and drizzle with reduced poaching liquid. Top with 1/4 cup vanilla ice cream per serving.
  6. Step 6: Sprinkle with a pinch of ground cardamom and serve warm or at room temperature.
