- 8 oz elbow macaroni
- 1 cup carrots
- 2 cups broccoli florets
- 1.5 cups cheddar cheese
- 1/2 cup whole milk
- 2 tbsp all-purpose flour
- 1 tbsp butter
- 1/2 tsp garlic powder
Instructions
- Step 1: Preheat oven to 375°F. Cook macaroni in salted water until al dente (8-10 minutes), then drain and set aside.
- Step 2: Toss chopped carrots and broccoli florets with 1 tbsp melted butter on a baking sheet, then roast for 15 minutes until tender.
- Step 3: In a saucepan, melt 1 tbsp butter over medium heat, whisk in 2 tbsp flour and 1/2 tsp garlic powder for 1 minute. Gradually add 1/2 cup milk, stirring until thickened (2-3 minutes). Remove from heat and stir in 1 cup cheddar cheese until melted.
