Cheesy Sausage and Egg Casserole with Fresh Herbs

- 1 lb, cooked and crumbled breakfast sausage
- 8 eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 cup, thawed and drained frozen spinach
- 1/4 cup, thinly sliced green onions
- 2 tbsp, chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp butter
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with 2 tbsp butter.
- Step 2: Whisk 8 eggs, 1/2 cup milk, 1/2 tsp salt, and 1/4 tsp black pepper in a large bowl until smooth.
- Step 3: Stir in 1 lb cooked crumbled sausage, 1 cup shredded cheddar cheese, 1 cup thawed drained spinach, 1/4 cup sliced green onions, and 2 tbsp chopped fresh parsley.
- Step 4: Pour mixture into prepared baking dish and spread evenly.
- Step 5: Bake 40-45 minutes until center is set and knife inserted comes out clean. Rest 10 minutes before slicing.
