Chicken and Broccoli Stir-Fry with Rice Noodles

- 6 oz rice noodles
- 10 oz boneless chicken thighs
- 2 cups broccoli florets
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp minced garlic
Instructions
- Step 1: Cook 6 oz rice noodles according to package directions, then rinse under cold water and set aside.
- Step 2: Cut 10 oz boneless chicken thighs into 1-inch pieces. Heat 1 tbsp sesame oil in a wok over high heat, add chicken and cook for 4 minutes until golden, then remove.
- Step 3: Add 2 cups broccoli florets and 1 tsp minced garlic to the wok, stir-frying for 3 minutes until crisp-tender. Return chicken to the wok, add 3 tbsp soy sauce, and toss with cooked noodles until evenly coated and heated through.
