Chicken and Plantain Skewers with Allspice Marinade

Ingredients
- 1 lb chicken breast
- 2 medium ripe plantains
- 2 tbsp olive oil
- 1 tsp allspice berries
- 1 tsp dried thyme
- 2 garlic cloves
- 1 Scotch bonnet pepper
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
Instructions
- Step 1: Cut chicken breast into 1-inch cubes and slice plantains into 1/2-inch rounds. Thread alternating pieces onto skewers, leaving space between each.
- Step 2: In a bowl, combine 2 tbsp olive oil, 1 tsp allspice, 1 tsp dried thyme, 2 minced garlic cloves, 1 finely chopped Scotch bonnet pepper, 1/2 tsp salt, 1/4 tsp black pepper, and 1 tbsp lemon juice. Mix well.
- Step 3: Coat skewers evenly with marinade, then refrigerate for at least 30 minutes.
- Step 4: Preheat grill to medium-high (375°F). Brush grates with oil to prevent sticking.
- Step 5: Grill skewers for 8-10 minutes, turning occasionally, until chicken reaches 165°F internal temperature and plantains are golden with caramelized edges.
- Step 6: Rest 5 minutes before serving.
