Chicken and Plantain Skewers with Allspice Marinade

  1. Step 1: Cut chicken breast into 1-inch cubes and slice plantains into 1/2-inch rounds. Thread alternating pieces onto skewers, leaving space between each.
  2. Step 2: In a bowl, combine 2 tbsp olive oil, 1 tsp allspice, 1 tsp dried thyme, 2 minced garlic cloves, 1 finely chopped Scotch bonnet pepper, 1/2 tsp salt, 1/4 tsp black pepper, and 1 tbsp lemon juice. Mix well.
  3. Step 3: Coat skewers evenly with marinade, then refrigerate for at least 30 minutes.
  4. Step 4: Preheat grill to medium-high (375°F). Brush grates with oil to prevent sticking.
  5. Step 5: Grill skewers for 8-10 minutes, turning occasionally, until chicken reaches 165°F internal temperature and plantains are golden with caramelized edges.
  6. Step 6: Rest 5 minutes before serving.
