  1. Step 1: In a large bowl, combine 5 cups mixed baby greens, 1/4 cup chopped fresh basil, 2 tbsp chopped fresh mint, 1 cup halved cherry tomatoes, and 1/2 cup diced cucumber.
  2. Step 2: In a small jar, whisk together 1/4 cup olive oil, 2 tbsp red wine vinegar, 1 tsp honey, 1/2 tsp Dijon mustard, 1/4 tsp salt, and 1/4 tsp freshly ground black pepper until emulsified.
