Chilled Garden Herb Salad

Ingredients
- 5 cups mixed baby greens
- 1/4 cup, chopped fresh basil
- 2 tbsp, chopped fresh mint
- 1 cup, halved cherry tomatoes
- 1/2 cup, diced cucumber
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp honey
- 1/2 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Instructions
- Step 1: In a large bowl, combine 5 cups mixed baby greens, 1/4 cup chopped fresh basil, 2 tbsp chopped fresh mint, 1 cup halved cherry tomatoes, and 1/2 cup diced cucumber.
- Step 2: In a small jar, whisk together 1/4 cup olive oil, 2 tbsp red wine vinegar, 1 tsp honey, 1/2 tsp Dijon mustard, 1/4 tsp salt, and 1/4 tsp freshly ground black pepper until emulsified.
- Step 3: Pour the dressing over the salad and toss gently until evenly coated. Chill for at least 30 minutes before serving to allow flavors to meld.
