- 2 tbsp unsalted butter
- 1 tbsp milk
- 1/4 cup finely chopped chives
- 1/4 cup crumbled feta cheese

- 1/8 tsp black pepper
Instructions
- Step 1: In a small bowl, whisk together 4 large eggs, 1 tbsp milk, 1/4 tsp salt, and 1/8 tsp black pepper until fully combined and slightly frothy.
- Step 2: Heat 2 tbsp unsalted butter in a non-stick skillet over medium-low heat until melted and bubbling gently.
- Step 3: Pour in the egg mixture and cook, stirring gently with a silicone spatula, for 3-4 minutes until softly set but still moist and creamy.
- Step 4: Remove the skillet from heat, then stir in 1/4 cup chopped fresh chives and 1/4 cup crumbled feta cheese. Let sit for 1 minute to allow the cheese to soften slightly.
- Step 5: Transfer to a plate immediately to prevent overcooking, as residual heat will finish setting the eggs.
