- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup, melted unsalted butter
- 16 oz, softened cream cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup heavy cream
Instructions
- Step 1: Preheat oven to 325°F (163°C). Line a 9-inch springform pan with parchment paper.
- Step 2: For the crust: Mix 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter until combined. Press firmly into the bottom of the prepared pan.
- Step 3: Bake the crust for 10 minutes, then let cool while preparing the filling.
- Step 4: For the filling: In a large bowl, beat 16 oz softened cream cheese and 1 cup granulated sugar until smooth. Add 3 large eggs one at a time, beating well after each addition.
- Step 5: Mix in 1 tsp vanilla extract, 1/4 cup unsweetened cocoa powder, and 1/4 cup heavy cream until smooth and well combined.
- Step 6: Pour the filling over the cooled crust. Bake for 50-60 minutes, or until the edges are set but the center is slightly jiggly.
- Step 7: Let the cheesecake cool completely in the oven with the door slightly open. Refrigerate for at least 4 hours before serving.
