- 1 cup, chunks pineapple
- 1/2 cup, sliced banana
- 1/4 cup (70% cacao) dark chocolate chips
- 1 tbsp coconut oil
- 1 tbsp shredded coconut
- 1 tbsp, finely chopped fresh mint
Instructions
- Step 1: Thread 2 strawberries, 2 pineapple chunks, and 1 banana slice onto each skewer.
- Step 2: Melt 1/4 cup dark chocolate chips with 1 tbsp coconut oil in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth.
- Step 3: Dip each fruit skewer into the melted chocolate, coating halfway, then roll in 1 tbsp shredded coconut and sprinkle with 1 tbsp fresh mint.
