  2. Step 2: Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Cook marinated chicken for 5-6 minutes per side until golden and internal temperature reaches 165°F.
  3. Step 3: While chicken cooks, warm 1 cup corn kernels and 1 (15 oz) can rinsed black beans in a separate pan for 3 minutes until heated through; stir in remaining 2 tbsp cilantro.
