Cilantro-Lime Chicken with Corn and Black Beans

Ingredients
- 4 (4 oz each) chicken breasts
- 2 lime
- 1/4 cup fresh cilantro
- 1 cup corn kernels
- 1 (15 oz) can, rinsed black beans
- 2 tbsp olive oil
- 1 tsp cumin
Instructions
- Step 1: In a bowl, combine juice of 2 limes, 2 tbsp fresh cilantro, 1 tsp cumin, and 1 tbsp olive oil. Add 4 chicken breasts (4 oz each) and marinate for 20 minutes.
- Step 2: Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Cook marinated chicken for 5-6 minutes per side until golden and internal temperature reaches 165°F.
- Step 3: While chicken cooks, warm 1 cup corn kernels and 1 (15 oz) can rinsed black beans in a separate pan for 3 minutes until heated through; stir in remaining 2 tbsp cilantro.
