Cinnamon-Baked Apples with Walnuts

Ingredients
- 4, halved and cored apples
- 1/2 cup, chopped walnuts
- 1 tsp cinnamon
- 2 tbsp brown sugar
- 1 tbsp, melted unsalted butter
- 1/2 tsp vanilla extract
Instructions
- Step 1: Preheat oven to 375°F (190°C). Place 4 halved and cored apples cut-side up in a baking dish. In a small bowl, mix 1/2 cup chopped walnuts, 1 tsp cinnamon, 2 tbsp brown sugar, 1 tbsp melted unsalted butter, and 1/2 tsp vanilla extract until combined.
- Step 2: Spoon the walnut mixture evenly over each apple half. Dot with additional 1/2 tbsp melted butter if desired.
- Step 3: Bake for 25 minutes until apples are tender and edges are bubbling, basting with pan juices once halfway through.
- Step 4: Serve warm with a dollop of vanilla yogurt or a scoop of vanilla ice cream.
