Cinnamon-Cardamom Baked Apples with Maple Syrup

- 4 medium Honeycrisp, cored apples
- 1/4 cup rolled oats
- 3 tbsp maple syrup
- 1 tsp cinnamon
- 1/2 tsp ground cardamom
- 2 tbsp, melted unsalted butter
Instructions
- Step 1: Preheat oven to 375°F. Place 4 medium cored Honeycrisp apples in a baking dish, then mix 1/4 cup rolled oats, 1 tsp cinnamon, 1/2 tsp ground cardamom, and 2 tbsp melted butter in a bowl.
- Step 2: Pack the oat mixture into the center cavities of each apple, then drizzle with 3 tbsp maple syrup.
- Step 3: Cover dish loosely with foil and bake for 25 minutes until apples are tender when pierced with a fork.
- Step 4: Remove foil and bake uncovered for 5 more minutes until the top is golden. Let rest 5 minutes before serving to allow syrup to thicken.
