Cinnamon-Spiced Apple and Oat Breakfast Bowl

- 1 large apples
- 1 tsp cinnamon
- 1 cup almond milk
- 1 tbsp honey
- 2 tbsp chopped walnuts
- 1/2 tsp vanilla extract
Instructions
- Step 1: Preheat oven to 375°F. Core and slice 1 large apple into 1/4-inch wedges, toss with 1 tsp cinnamon, and bake for 15 minutes until tender.
- Step 2: In a saucepan, combine 1/2 cup rolled oats, 1 cup almond milk, 1/2 tsp vanilla extract, and 1/4 tsp salt. Simmer on medium-low heat for 8-10 minutes, stirring occasionally, until thickened.
- Step 3: Divide oats into bowls, top with baked apple wedges, drizzle with 1 tbsp honey, and sprinkle with 2 tbsp chopped walnuts before serving.
