Cinnamon-Spiced Apple Compote with Vanilla

- 4 medium, peeled and diced apples
- 1/2 cup water
- 1 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 2 tbsp honey
- 1 tbsp lemon juice
Instructions
- Step 1: In a medium saucepan, combine 4 medium peeled and diced apples, 1/2 cup water, 1 tsp ground cinnamon, and 1 tbsp lemon juice. Bring to a simmer over medium heat.
- Step 2: Reduce heat to low, cover, and cook for 15-18 minutes until apples are tender and break down into a thick compote, stirring occasionally.
- Step 3: Stir in 2 tbsp honey and 1/2 tsp vanilla extract, then cook uncovered for 2 minutes until the mixture thickens slightly. Remove from heat and let cool for 10 minutes before serving.
