Cinnamon-Spiced Apple Oatmeal with Toasted Walnuts

  1. Step 1: Combine 1/2 cup old-fashioned oats and 1 cup water in a small saucepan. Bring to a simmer over medium heat, then reduce to low and cook for 8-10 minutes, stirring occasionally, until oats are creamy and thickened.
  2. Step 2: While oats cook, core and dice 1 medium apple into 1/4-inch pieces. Stir diced apple and 1/2 tsp cinnamon into the oats during the last 2 minutes of cooking.
  3. Step 3: Remove from heat, stir in 1 tbsp maple syrup, and top with 1/4 cup toasted walnuts (toasted in a dry pan for 2-3 minutes until fragrant) before serving.
