- 1 cup coconut milk
- 1/2 cup mango
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
Instructions
- Step 1: In a jar, combine 1/4 cup chia seeds, 1 cup coconut milk, 1/4 tsp cinnamon, and 1/2 tsp vanilla extract. Stir vigorously for 1 minute until seeds are coated.
- Step 2: Cover and refrigerate overnight (at least 6 hours) until thickened and pudding-like.
- Step 3: In the morning, stir the pudding to break up any clumps. Slice 1/2 cup fresh mango into thin pieces.
