- 1 tbsp olive oil

- 1 tsp fresh thyme
Instructions
- Step 1: Dice sweet potatoes into 1/4-inch cubes and toss with 1/2 tsp salt, 1/4 tsp black pepper, and 1 tbsp olive oil.
- Step 2: Heat remaining 1/2 tbsp olive oil in a large skillet over medium heat. Add diced onion and cook for 3 minutes until softened.
- Step 3: Add sweet potatoes to the skillet, spreading in an even layer. Cook for 10 minutes without stirring, then flip with a spatula and cook another 10 minutes until golden and tender.
